Ingredientsbuñuelos de bacalao

  • 200 grams of cod crumbs
  • 200 grams of flour
  • 1 egg yolk 
  • 1 tablespoon of baking powder 
  • 2 egg whites 
  • 1 1/2 tablespoons chopped parsley
  • 1 tablespoon Cardenal Mendoza brandy
  • Olive oil 3/4 cups
  • salt to taste
  • Recipe:

    Soak the breadcrumbs in cold water for 8 hours before using them. Place them in a saucepan covered with cold water, bring to a boil, then remove from heat and let cool. In a bowl, mix the flour and baking powder; add the egg yolk, a pinch of salt, the brandy, 1 tablespoon of oil, the parsley, and enough water to form a smooth, not-too-thick batter. Drain the cod well and add it to the batter. Beat the egg whites until stiff peaks form and fold them into the batter, mixing gently so they don’t lose their volume. Heat plenty of oil in a skillet and fry the fritters, spooning the batter into the oil until golden brown. Drain on paper towels and serve warm.
