Cardenal Mendoza Ángelus, the most recent addition to Sánchez Romate, was born from the idea of capturing the aroma of the orange blossoms in the winery’s courtyard and the essence of Jerez de la Frontera.
Its creator, the former foreman, macerated sweet and bitter orange peels in Cardenal Mendoza brandy, achieving a drink that he himself defined as “the angelic characteristics of Cardenal”.
The maceration and distillation are carried out in a historic distillery founded in 1824, renowned for its traditional water bath process.
The Angels’ Share
The angels’ share refers to the portion of alcohol, approximately 2% to 5% annually, that evaporates from wooden barrels during the aging of spirits such as whiskey, cognac, or rum. It is a natural and poetic loss, so named because it is believed that the angels take their share of the liquor.
