licor de chocolate al Cardenal Mendoza

Ingredients for 1L:

  • 150 g of drinking chocolate
  • 200 g of sugar
  • 150 ml of water
  •  Orange peel
  • 1 dash of lemon juice
  • 700 ml of milk
  • 1/2 teaspoon of salt
  • A pinch of white pepper
  • 250 ml of Cardenal Mendoza brandy
  •  

    Preparation:

    In a saucepan, add the sugar, lemon juice, and water; place over low heat and stir until the mixture thickens.

    Next, add the chopped chocolate along with the orange zest. After a few minutes, add the salt and pepper and stir gently.

    The next step is to add the milk and simmer for about 5 minutes. Once the 5 minutes are up, turn off the heat and let it rest; when it has cooled, remove the orange peel and strain it through a sieve, so the mixture will be much smoother.

    Once strained and at room temperature, add the Cardenal Mendoza brandy (it is important that the mixture is not hot, as adding the brandy while it is hot will cause the alcohol to evaporate). The final step is to pour the liqueur into a bottle and store it for a week in a dry, dark place. And there you have it—you’ve made an exquisite chocolate liqueur!
