This delicious recipe comes from my grandmother, who always seasoned her meals (especially meats) with a few drops of Cardenal Mendoza To enhance the flavors of their dishes, we know very well that our grandmothers’ dishes are the tastiest.
In fact, the label on this bottle has always seemed familiar to me since I’ve been seeing it since I was little.
I have always loved this food and I must admit that my predecessor used to serve it to me with a good base of French fries.

INGREDIENTSpollo con puerro y cebolla

    1 free-range chicken, cut into small pieces
    4 leeks
    1 medium onion
    1 glass of fino sherry
    1 glass of Brandy de Jerez Cardenal Mendoza
    salt, black pepper and extra virgin olive oil

Let’s begin preparing the dish:

1. We need a whole free-range chicken. When buying it, ask the butcher to cut it into small pieces. Clean it, remove the skin, season with salt and pepper, and set aside.

2. Fill the bottom of a large saucepan or pot with extra virgin olive oil and add a julienned onion and 4 large leeks, from which you have previously removed the green part, the first layer of skin, and sliced ​​them into fairly thick rounds. Sauté everything together over low heat for a while.

3. When they are softened, add the chicken pieces and continue to sauté over medium-high heat until the chicken begins to brown, but be careful! We must not overdo it.

Note: If you’re not worried about calories and fat, leave the skin on the chicken. After seasoning it with salt and pepper, coat it in flour and fry it. Remove the pieces and set them aside. In the same oil, sauté the onion and leeks, then add the previously fried chicken pieces.

4. Next, add salt, pepper, a glass of fino sherry, and a generous splash of brandy. Cardenal MendozaThe rest is covered with water or vegetable broth until the chicken is no longer visible. We cover it and let it simmer over very low heat for half an hour.

5. Uncover the pot, turn up the heat to high and let the broth reduce until it reaches the consistency you like best.

6. You can serve it with whatever you like. If you’re looking for something lighter, you can serve it with white rice, as it will be delicious with the sauce. However, as I mentioned at the beginning of the blog, it’s a real treat with some French fries. Enjoy!
